Sealing with CAPOL® sealing agents is recommended for lasting protection of the glaze on dragées. The solutions containing shellac protect the dragées from mechanical strain and ensure that the glaze remains stable even with high humidity or temperature fluctuations.
Particularly sensitive chocolate products should be protected using CAPOL® sealing agents, as should the color and surface glaze of sugar dragées. The coating makes the dragées less susceptible to external influences caused by temperature fluctuations or high humidity. Sealing of dragées is particularly recommended for climate conditions with high humidity.
CAPOL® sealing agents also make the dragées more resistant to mechanical strain during the production, packaging and transport process. Furthermore, they prevent the dragées from drying out, which increases the shelf life of the confectionery. We also offer vegan solutions using alternatives to the traditional shellac.
