Pre-coating centres

Some centres need to be pre-treated before coating in a process referred to as pre-coating, which covers the centre in a thin film to form a barrier.

Sticky centres such as dried fruit pieces are excellent candidates for sticking together or clumping; the barrier prevents this from happening while improving the flow, thus significantly aiding the coating process.

A barrier specifically matched to the centre gives protection while improving sugar and chocolate coating adhesion and substantially increasing the product's shelf life.

Pre-coatings – Perfect adhesion in the coating process

Pre-coatings with high starch concentrations are excellent at pre-treating a variety of centres in the coating process. FIX GUM® pre-coatings come ready to use, are easily applied and provide compellingly short drying times, speeding up the process. FIX GUM® pre-coatings can be applied by hand or using a dosing system.

The fat barrier – Natural effectiveness

Nuts are often used as centres for chocolate, sugar and sugar-free coatings. Nuts contain oils that may, given time, seep through a coating to appear on the surface of the product.

FIX GUM® pre-coatings form a thin but effective barrier that prevents fat migration from these fatty centres.

The moisture barrier – Protection for sensitive centres

FIX GUM® pre-coatings also form an excellent moisture barrier that effectively seals the surface to prevent the centre from drying out while also protecting moisture-sensitive centres from outside moisture during the coating process. This increases the shelf life of the product.

The coating – Small but effective

By using FIX GUM® pre-coatings, sticky centres such as fruit pieces can be separated from one another easily. This means that they are easier to coat with sugar or chocolate with improved rolling characteristics to prevent clumping.

FIX GUM® pre-coatings give soft centres such as raisins additional stability.

Our products for centres to be coated

FIX GUM® A (liquid) and FIX GUM® B (powder) – the FIX GUM® system is ideal for pre-coating centres such as nuts, raisins, dried fruit pieces, and liquorice as well as gums and jellies, giving the centres the perfect preparation for coating with sugar or chocolate.

Polyols can be used to replace the sugar in FIX GUM® for manufacturing sugar-free confectionery. Do not hesitate to contact us for consultation with one of our application technologists.

Gum Arabic can replace starch in our FIX GUM® products for diabetic confectionery.

Our pre-coatings can be applied in conventional coating pans or in coating equipment by hand or using a dosing system.

CAPOL® 236 N is also a pre-coating agent for chocolate centres or balls of chewing gum to be sugar-coated.
